Plastic bottles degrade over a long period of time- by the time you've kept a bottle for around three months, it starts to release a dangerous amount of chemicals into it's contents. Heat speeds this process up, and cold slows it down. Try this for yourself- if you have an old plastic bottle, put water in it, put it somewhere warm or hot and leave it for a while. Then compare the taste of the water to tap water. Depending on how old the bottle is and how long you left it, it will taste accordingly bad.
